This Asian inspired Chicken Stir Fry is an easy and healthy dinner that you can put together in 20 minutes. It’s a meal that I always fall back on when trying to use up a mix of fresh veggies. Choose any variety of vegetables and this recipe will never get old! The spicy honey sauce reminds me of sweet and spicy Asian food, and I love how simple it is!
Chicken Stir Fry
Needed:
- veggies of your choice (carrots, bell pepper, onion, brocoli, snow peas)
- pineapple chunks
- breaded chicken nuggets (homemade or frozen)
- rice
- olive oil
- 1/4 tsp garlic powder
- salt
- pepper
Spicy Honey Sauce 2 servings
Needed:
- 1/3 cup honey
- 1 tsp honey mustard (optional)
- 1/2 tsp sriracha hot chili sauce
Bake chicken and cook rice as directed. Chop vegetables so that they are all about the same size. Heat skillet with a little olive oil. Toss in crunchiest veggies, like carrots and brocoli, first. Add garlic powder. I like to wait and add onion during the last few minutes of cooking so that it doesn’t get soggy. Salt and pepper to taste. Stir in pineapple and remove from heat.
Mix together spicy honey sauce ingredients in a medium sized bowl. As soon as chicken comes out of the oven, place into the sauce and stir to coat. Serve chicken and vegetables on top of rice. Pour any extra spicy honey sauce over rice. I hope you enjoy this Asian inspired dish!
