We love grilled cheese sandwiches around here. Gourmet grilled cheeses are a popular food trend right now, and I’m all about it! This is my first in a set of good ol’ grilled cheese sandwich recipes with a twist.
Jalapeno Popper Grilled Cheese
- french bread
- cheddar cheese
- cream cheese
Turn oven broiler on to high. While bacon is cooking (with whatever method you prefer), slice bread and cut jalapeños in half (remove seeds). Place jalapeños, skin side up, on a baking sheet and place under broiler for several minutes (just until skins have slightly charred). Spread cream cheese on one of the bread slices. Layer on jalapeños, bacon, and cheddar cheese.
I used a cast iron panini press, but these sandwiches would be great cooked in a skillet as well. Butter the outside of your sandwich and place in pan. Toast sandwich on both sides. Serve when cheese has melted. More grilled cheese goodness to come!
