Fresh Creamy Tomato Soup with BasilThis creamy tomato soup is my favorite. It’s perfect for chilly evenings. We love to eat this soup along with grilled cheese sandwiches!

Fresh Creamy Tomato Soup                                 4 Servings

Needed:                                                                             

  • 4 fresh tomatoes (chopped)
  • 1 cup (8 oz) tomato sauce
  • 1 cup (8 oz) vegetable or chicken stock 
  • 10-12 fresh basil leaves (washed and chopped)
  • 1 cup half-and-half
  • 4 tbsp butter
  • 1/8 tsp garlic powder
  • salt
  • pepper 
  • sugar

Pour tomatoes, tomato sauce and stock into a saucepan. Simmer for 30 minutes. Remove from heat and let cool. Pour soup into a blender and puree along with basil leaves.Fresh Creamy Tomato Soup with BasilReturn to saucepan. Add butter and half-and-half, stir over low heat. Salt and pepper to taste. If soup tastes slightly bitter, add 1 teaspoon or so of sugar. Serve when soup is heated through.Fresh Creamy Tomato Soup with Basil

  1. This looks good. I’m kind of a tomato newbie. I just started loving them recently. I can’t believe how easy (and delicious) tomato soup can be. It’s one of my faves. I have a very rich recipe that calls for roasting the tomatoes first. It’s super good.
