I really like hummus but I’ve never made any myself. It’s so simple, I’m not sure why I didn’t do this sooner! Hummus is a healthy snack, or a great appetizer for summer parties and barbecues. It’s also completely vegetarian! I chose to make hummus with avocado, I love the taste and texture that the avocado added to this recipe.
Avocado Cilantro Hummus
- 1 16oz can chickpeas (garbanzo beans)
- 1 avocado
- cilantro -small bunch (optional)
- 1/2 lime
- 2 tbsp olive oil
- 1/2 tsp garlic powder
- 1/4 tsp salt
- 1/4 tsp cayenne pepper
Drain and rinse chickpeas. Juice the lime and slice up avocado.
Place all ingredients into a blender or food processor and blend until smooth. Add a little water if the consistency is thicker than you’d like (I left it a little chunkier, more like guacamole).
It really couldn’t be easier! I served up the hummus with flour tortillas that I had toasted in the oven and then cut into triangles. This hummus would also make a great dip for corn tortilla chips, pretzels, or veggies!

Cilantro is my favorite herb and I like to add it to so many different things. We love using it as a pizza topping!

The hummus would definitely still be good without it! With cilantro, you either love it or ya hate it. The funny thing is.. I couldn’t stand it when I first tried it, but I’ve really come to love it!

I just made this and it is so good. I changed it up a bit. I used crushed garlic and Serrano pepper instead of garli and cayenne-mostly because that’s all I had in my kitchen. I am so happy with the layers of flavor, and I’m already excited to wow my family with it.

This sounds so good! Do you know if the avocado in it turns brown if you need to store leftovers? I mean, I’m sure I could eat the whole thing in one sitting but I’m not sure my waistline will agree with me :)
The lime juice (or lemon, if you prefer) will keep your hummus from turning brown! Keeping the hummus cold and in an airtight container will also keep it green and fresh-looking. I hope you love it!

This hummus is best and freshest the day that it’s made, but the lime juice should help to keep it good for about a week!
