Crispy Potatoes with Smoked Sausage

This is one of my go-to meals that I make all of the time. We often have all of the ingredients for this recipe on hand and it’s one that my husband loves. Meat and potatoes are the base for this recipe, add any veggie that you have on hand to give it some variety! I don’t like kitchen clean up, so I absolutely love the fact that this is a one dish meal! The ingredient quantities in this recipe are easily adjusted for making any amount of food that you need.

Crispy Potatoes with Smoked Sausage                           serves 4-6

  • smoked sausage (1 package)
  • 6 large red potatoes
  • carrots (or green beans, sugar snap peas, etc.)
  • olive oil
  • garlic powder
  • salt
  • pepper

Pre-heat oven to 425. Wash potatoes and then peel them (I peel off some but not all of the skin). Cut into bite-sized chunks.\

Crispy Potatoes with Smoked Sausage

Put potato chunks in a bowl of ice water for 30 minutes (this will help the potatoes to get crispy on the outside and soft inside, while cooking). Dry potatoes completely. Place potatoes on a parchment lined baking sheet and lightly coat potatoes with olive oil. Slightly separating potato chunks on the pan will help them to crisp on all sides.

Crispy Potatoes with Smoked Sausage

Lightly sprinkle potatoes with garlic powder, salt, and pepper. Bake for 20 minutes. Slice smoked sausage and carrots or other veggies (or use whole baby carrots). Remove pan from the oven and add veggies and smoked sausage slices. Stir to flip potatoes over and coat new veggies with excess olive oil. Bake for 20 more minutes, then serve!
