One of my all-time favorite desserts to order at restaurants is the skillet cookie :: a warm and gooey, freshly baked chocolate chip cookie topped with ice cream and hot fudge, brought to your table in a cast iron skillet, straight from the oven. Love! There’s just something about the cookie baking in that cast iron skillet, it’s so, so good! You can get that same treat at home, all you need is a small cast iron skillet like this.
Chocolate Chip Skillet Cookie makes 3-4 skillet cookies (2 servings each)
- 1 1/8 cups flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 stick butter
- 1/2 cup brown sugar
- 1/4 sugar
- 1/2 tsp vanilla
- 1 egg
- 3/4 cup semi-sweet chocolate chips
- •••
- vanilla ice cream
- hot fudge
Preheat oven to 375F. Combine flour, baking soda, and salt. In another bowl, soften butter (don’t completely melt it), then mix in sugars and vanilla. Beat in eggs. Then add flour mixture and beat until well combined. Stir in chocolate chips.
Split the cookie dough into four equal amounts. Press one quarter of the dough into the center of your skillet, bake for 12-15 minutes (or until the cookie is a light golden color).
Wrap and freeze extra dough. Later on, pop it straight from the freezer to your skillet whenever you’re having a cookie craving! This dough makes a yummy “normal” cookie too, if you’d rather spoon the dough onto a baking sheet and bake it up that way.
Be careful, as you can imagine, the skillet will be very hot. Top with ice cream and hot fudge, serve immediately. Oh yum! Enjoy!
Love choc chip cookies but can honestly say have never come acrosss a skillet cookie before. Have to try this. We’re in the depths of winter, it’s school holidays and I have a full house of teenagers to feed.. Thanks for a perfect recipe.
I might have to get myself a cast iron mini skillet just for this. Looks like a great dish to serve up for dessert for Mrs P and me to share.

What size skillet did you use?
I used a 6″ skillet, but you could use a larger or smaller size depending on the amount of dessert you’d like to make!
Could you use the leftover dough to make regular cookies?
