  It’s kind of hard to believe that we’re already smack dab in the middle of Summer! Well, it’s really not so hard to know that it’s summer when you live in the scorching state of Texas, but, you know what I mean. Champagne Salad Frozen Dessert

This recipe was one of my great grandma’s specialties. Champagne Salad was one of the desserts that Granny always made for holidays, it was my favorite! Last Christmas I made these Tea Towels using Granny’s handwritten recipe card for this dessert. After featuring the DIY on the blog, several people asked me about the recipe and I knew that it was one that I wanted to make and share here. Corn and Black Bean Salsa

This salsa has such a fresh and flavorful taste, it’s perfect for summer! All of the ingredients in this simple recipe are easily kept on hand, great for a last minute appetizer or side dish. Corn and Black Bean Salsa 1 cup rotel 1 cup corn 1 cup black beans 1/4 cup onion (chopped) fresh cilantro corn chips 1 lime Stir together rotel, corn, beans, and onion. Add lime juice to taste.
