This recipe is so quick and easy… do I always say that?? Well, this recipe really is almost effortless (adapted from here). I’ve really been wanting to try Mexican Street Style Corn and I finally found some really good-looking corn last week. This recipe was such a hit! It has so many layers of flavor with the sweetness of the corn, the salty spiciness of the mayo, and the tartness of the lime. Bruschetta with Fresh Mozzarella

My first bruschetta experience was at a local Italian restaurant while on a date with my (now) husband. We decided to try something new, we chose their bruschetta. I enjoyed it so much, I couldn’t wait to try to duplicate it! This is such a fast and tasty recipe. It’s a great appetizer, an alternative to garlic bread, or it can stand on its own!
