This recipe is so quick and easy… do I always say that?? Well, this recipe really is almost effortless (adapted from here). I’ve really been wanting to try Mexican Street Style Corn and I finally found some really good-looking corn last week. This recipe was such a hit! It has so many layers of flavor with the sweetness of the corn, the salty spiciness of the mayo, and the tartness of the lime. Corn and Black Bean Salsa

This salsa has such a fresh and flavorful taste, it’s perfect for summer! All of the ingredients in this simple recipe are easily kept on hand, great for a last minute appetizer or side dish. Corn and Black Bean Salsa 1 cup rotel 1 cup corn 1 cup black beans 1/4 cup onion (chopped) fresh cilantro corn chips 1 lime Stir together rotel, corn, beans, and onion. Add lime juice to taste.
